am i missing some obvious reason why the "main events" opened the shows and things like boss man vs. akeem closed them?

​Yes. The show aired at an ungodly hour for most parts of the country, so to make sure that the main event segment got the biggest rating they’d lead off with it, and then as the ratings rapidly dropped for the rest of the show they’d just throw whatever out there. It’s not like today where stuff is structured to build towards the end of the show as the big climax. ​
